Roasted Artichoke Salad



I have to say I'm enjoying Ms. Barefoot Contessa. I need to make more of her recipes, but everything I've tried of hers so far I LOVE. I made this Roasted Artichoke Salad yesterday for lunch and it was goooood; today I'm eating the leftovers and it's maybe even a bit better. Cool!

Note: I used the artichoke hearts from Costco (the ones in the big jar) instead of frozen ones, and I used a fresh bell pepper instead of jarred ones.

Mmmmm. . . that does look good! Congrats on the A+. It does always make me feel better when someone gives me a compliment or makes me feel like I did a good job. It's especially nice when you hear from your boss.
